Coconut barfi was my school time favorite. After school I became weight conscious & reduced eating coconut barfi.
Coconut powder which was in my fridge for some time has been tempting me & finally I did it.
Oh yes here is my favorite coconut barfi pictures & recipe. Well, i finished all my barfis ...ha ha
Coconut powder - 1 cup ( Can use grated coconut also)
Ghee - 3 tbsp
Milk - 1/2 cup
Condensed milk - 3 tbsp
Sugar - 4 tbsp
Orange food color - 1 pinch
1. Mix coconut powder & ghee. Place it in the oven pan and cook in the oven for 5 mins.
**** if you are going to use fresh grated coconut, then dry roast & mix it with the ghee.
2. Remove the mixture from the oven and add milk, condensed milk, sugar, cardamom powder & color to the mixture. Mix well and cook in the oven for 30 mins. ( Cooking time might varies depending upon the oven you are using. For grated coconut + 10 mins).
3. After 30 mins, pour the barfi mixture on the greased plate. Shape it & garnish with pistachios.
4. Allow it to cool for at least half an hour. Cut into cubes & serve.
